Easy and Delicious Energy Bites Recipe

I'm so excited to share my favorite easy snack recipe today!
I started making these way back in college and I don't even know where I got the original recipe. I've also tweaked it along the way. But most energy bite recipes follow a similar formula and it's very easy to make swaps according to your preferences. These take almost no time to make and are a huge hit in my house, even for the 4 year old.
Ingredients:
1 cup peanut butter
1/3 cup honey
1 cup rolled oats
2 TB ground flax seed (if you don't have this, add 2 TB more oats)
At least 1/3 cup chocolate chips
Directions:
Combine the peanut butter and honey, and then microwave for 20 seconds.
Mix the oats and flax seed into the warmed peanut butter and honey mixture.
Place this in the refrigerator and let it cool for 20-30 minutes.
Add chocolate chips and roll into balls!

This recipe makes about 20 energy bites but it depends on how large you make them. These store well in the refrigerator for 3-4 days. We also did mini m&ms this week instead of chocolate chips and that turned out great, any type of chocolate will do!
Why I love these energy bites for a snack:
They're delicous which is reason enough on it's own but also..
They are filling (as long as you have a few) with multiple food groups present.
Again, totally fair to eat or make something just because you like it, but as eating disorder dietitians we love to help break it down to see all the positives that come from food.
Oats and honey --> carbs which are the body's PRIMARY fuel source! Especially important for brain function and overall energy.
Peanut butter and flax seed --> fat which is important for fullness, hormone health, and much more- and protein which is needed for repair and growth of body tissues
Chocolate chips --> FUN but also carbs which again is the food group our body needs the most of. Even if you add them just for fun, they are still giving your brain and body fuel.
Bonus: oats and the flax seed also give a nice dose of fiber which is important for digestion and also helps prevent some chronic disease and cancers
If you try this I'd love to hear what you think!
